Overall Accountability

The Commercial Cook/Food Service Coordinator oversees the operation of the school cafeteria and catering program. Under the supervision of the teacher, provides support for students involved in the Food Studies Program.

 

Specific Accountabilities

  • Assists the teacher with the instruction and supervision of students in the commercial kitchen
  • Maintains the commercial kitchen and equipment, including the maintenance and ordering of supplies; oversees regular inventory; maintains purchasing and receiving, cooking and food storage procedures
  • Develops menu items, food costing, yield calculation and portion control; assists in standardizing recipes to ensure consistency; maintains all required records pertaining to food safety
  • Maintains budgets and food costing reports
  • Coordinates the food service operation with the teacher, including catering services
  • Collaborates with the teacher and students in promoting the Food Studies Program

 

Qualifications

  • Minimum High School Diploma
  • Five (5) years of experience in a supervisory role (Executive Chef, Sous Chef, Chef de Partie)
  • Journeyman/Red Seal Certification
  • Excellent communication skills, both written and oral
  • Proficient with Microsoft Office
  • ChefTec software experience preferred
